Protein Bran Muffins

Moist, and full of protein, these muffins are healthy and delicious

I made some substitutions, so am not rating. I substituted Oat Bran for natural bran, agave nectar for the brown sugar, oat milk for the skim and rice protein for the soy protein. As suggested, I added some dried berries. The texture was a little mushy; maybe I need to use a little less milk next time. Flavor is good.

  1. Set oven to 375 degrees.
  2. Line or grease muffin cups.
  3. In a large bowl, combine first 7 ingredients.
  4. In another bowl beat together the egg whites, brown sugar, oil, milk and molasses.
  5. Stir in fruit (I will often add blueberries and rasberries as well).
  6. Add liquid ingredients to dry mixture; stir just ubtil moistened.
  7. Fill muffin cups.
  8. Top with crumble topping (optional) - include 3tbsp of brown sugar, flour and oats each + 2 tbs of soft butter).
  9. Bake for 18 to 23 mins, until tops spring back.
