  • Cream oleo and sugars until fluffy.
  • Beat in eggs.
  • Sift flour with baking soda, baking powder and salt.
  • Stir flour mixture into creamed mixture.
  • Add vanilla extract.
  • Mix in coconut, nuts and rolled oats until uniformly blended.
  • Roll into 1 1/4 inch balls and space 2-inches apart on lightly greased baking sheets.
  • Using your fingers, flatten balls into patties about 1/4" thick, evening up ragged edges.
  • Bake in 375°F oven 8-10 minutes or until pale golden brown.
  • Remove to wire rack to cool.

My husband and I lived in the SF Bay area for 30+ years. For most of those years, we both worked long hours and figuring out what to fix for dinner was the hardest part of my day. My new hobby is to do a zaar search for an ingredient or specific type of dish and then head for the kitchen to try it out. Our shared passion is riding our HD motorcycles. Exploring the beautiful United States on two wheels has opened a whole new world to us. I lived vicariously through Alton Brown's 2 seasons of exploring the regional culinary specialties of the country on motorcycle. That's certainly part of the fun of touring - get off the highway and explore the local towns and cuisines.
