      These turned out very nice. I did add a little more vegetables than the recipe called for, used green onion instead of shallots, and added green bell peppers. Of course, if the amount of vegetables is increased, the omelets are harder to keep in shape. The sauce is very nice. I used homemade chicken stock instead of instant. Thank you very much for posting this recipe.
