A former co-worker gave me this recipe and they haven't failed me yet.
- 1 cup white sugar
- 1⁄2 cup firmly packed light brown sugar
- 1 (4 ounce) boxcook and serve vanilla pudding mix (NOT INSTANT)
- 2⁄3 cup evaporated milk
- 2 tablespoons butter
- 2 cups whole pecan halves
- Mix all ingredients except pecans in heavy saucepan.
- Cook over medium heat, stirring constantly, until mixture reaches"soft ball" stage on candy thermometer.
- Remove from heat and stir for 30 seconds.
- Add Pecans and drop by tablespoon on waxed paper.
- Let harden.
- I find it is easier to remove them if you place a cloth dish towel on counter and put your piece of waxed paper on top of dish towel.
I haven't personally made this recipe, but I have had pralines Luby herself has made from this recipe (she was kind enough to send some along with a cookbook in the cookbook swap) and, let me tell you, these are fantastic! The perfect praline taste and texture I remember from a childhood visit to Louisiana. Yum!
