- 1 cup chopped onion
- 1 tablespoon vegetable oil
- 1 1⁄2 cups well drained crushed tomatoes
- 1 (4 ounce) can green chilies
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 lb extra-sharp cheddar cheese, grated
- Saute the onion in the oil in a heavy frying pan over medium heat until it is soft but not brown,about 8 minutes.
- Add the tomatoes,chilies,salt,pepper and cheese and cook stirring until the cheese is melted.
- Serve with large corn chips.
