- 1 cup shortening
- 2 cups brown sugar, firmly packed
- 2 eggs, well beaten
- 3 cups flour, sifted
- 1⁄2 teaspoon salt
- 2 teaspoons baking soda
- 1 teaspoon saigon cinnamon
- 1⁄2 teaspoon allspice
- 1⁄2 teaspoon ground cloves
- 1 cup walnuts or 1 cup pecans, chopped
- 2 cups dates or 2 cups prunes, finely chopped
- 2 cups beer
directions
- Preheat oven to 350.
- Cream shortening until soft in a large bowl. Gradually add sugar, creaming until light and fluffy. Add eggs and mix well.
- Sift flour, salt, baking soda, and spices together. Reserve about 2 tablespoons. Beat the rest into the batter.
- Slowly add beer and blend thoroughly; it may foam while beating.
- Using reserved flour-spice mixture, toss fruits and nuts until lightly coated. Fold into batter, blending thoroughly.
- Pour batter into a greased and floured 10" tube pan.
- Bake at 350 for 1 hour and 15 minutes, or until cake tester comes out clean.
- Cool in pan for 10 minutes; then carefully turn out of pan to cool completely. Cover and refrigerate overnight.
- Serve plain, dusted with powdered sugar or with a lemon glaze.
