I use this "powdered sugar" to make frosting for diabetic cakes I make for my husband.

Directions

  1. Combine all ingredients in a food processor or blender.
  2. Whip until well blended and powdered.
  3. Store in jar with a tight lid.
  4. To make frosting, use the mixture as you would use confectioners sugar. Adding softened butter, vanilla and 2 to 3 T. milk and beating until smooth. Add cocoa powder to make choc. frosting.

My daughter volunteered me for 70 cupcakes AND 3 dozen cookies. I hate sugary loaded icings whether homemade, just don't buy store bought. Anyway @ 1021pm tonight, which is eve of the Valentine's Day party for her class. I realized I hadn't enough powdered sugar. THIS SAVED ME. And will always keep it on hand now and use instead. Low in sugar tastes GREAT , added almond and cherry flavoring.... THANK YOU SO MUCH SUMMER BREEZE!!! Now if I can get her to tell me at least a day before her next party I'll have it made! This worked wonderfully in the very rich hot buttered rum recipe on the site...thanks for posting it...I can see that I will have to keep this on hand from now on.
