Found this in a cookbook by the checkout stand of the store. DH and I love hominy and this salad would be great for a BBQ, tailgating party or just a regular meal.

  1. Pour hominy into skillet, add water. Cook over low heat; separate hominy with wooden spoon. Drain well. Place into large bowl. Add beans, corn, bell pepper, onion,chilies, salt and black pepper. Toss to combine well. Stir in salsa. Serve at room temperature or refrigerate up to 24 hours.
