Super Easy and Super Good.. Not a big fan of reg. cottage cheese but this was YUMMY.. I used 1 yellow and 1 red bell pepper (not to big on green) and the roma tomatoes.. Make sure to pay attention when buying the ranch DIP mix, I almost bought the ranch dressing.. :) Keeper 4 Sure!!

This recipe was SO refreshing on a 102 degree summer day -- my husband and I really enjoyed it. I served it the next day during a cookout at our house, and many people expressed how good this salad is. Next time I will try adding a little green onion as well. Thanks for sharing!

This is such a delicious salad. I made the potluck size salad but stopped at 2 32 ounce containers of cottage cheese. I thought that was plenty and I didn't want the vegetables drowned out. Thanks for sharing this recipe!

This was great! I cut the recipe down to just make a lunch for myself and it was fantastic. Used fat free cottage cheese, a red bell pepper (taste pref) and also added in some chopped green onions. Delicious and healthy!

I really enjoyed this version of cottage cheese. My DH, however, thought it was too salty so I have given it only four stars. Next time I will try 1/2 envelope of the ranch dip and see how that goes. I have a hunch this salad would be delicious if you left out the ranch dip altogether! I used the small cutting edge on the Nicer Dicer to dice the veggies and thought that was just right. I did cut the recipe in half but liked having it around a day or two to serve as a side dish. I'll be making this a lot, one way or another. Thanks for a great recipe.

This was a very good salad . I scaled it down to feed DH and I . I did notice that the longer this sat , the more watery it got . I just suggest you serve it soon after making it so that the veggies don't release too much of their water and make this salad runny . I will be making this refreshing salad a lot come summer !
