Potluck Portion -- Cottage Cheese Summer Breeze Salad

My daughter-in-law from my Husband's side gave me this recipe and I have used it with MUCH success at several "bring a side dish" parties. Everyone Always asks for the recipe, so I thought I would share it here as well. Simple and Scrumptious ! The following recipe is enough for a party, but you can always scale it down for your family.

  1. Chop Cucumbers, Peppers, and Tomatoes into manageable bite size hunks, and place in large mixing bowl.
  2. Pour both packs of the dry dip mix over veggies and mix to coat.
  3. Fold in cottage cheese and mix to distribute dip mix and veggies throughout then Chill until ready to go to party.

Super Easy and Super Good.. Not a big fan of reg. cottage cheese but this was YUMMY.. I used 1 yellow and 1 red bell pepper (not to big on green) and the roma tomatoes.. Make sure to pay attention when buying the ranch DIP mix, I almost bought the ranch dressing.. :) Keeper 4 Sure!!

This recipe was SO refreshing on a 102 degree summer day -- my husband and I really enjoyed it. I served it the next day during a cookout at our house, and many people expressed how good this salad is. Next time I will try adding a little green onion as well. Thanks for sharing!
