    Directions:

      Fry potatoes in 3 T olive oil until browned and tender.

      Remove and keep warm.

      Add remaining oil to skillet, add shrimp.
    4. 4
      Cook for 2 minutes; add remaining ingredients and saute for 3 minutes.

      Return potatoes and mix well.

      Yummy! And very quick & easy. The lemon gave it a nice fresh taste. The only chnage I made was to substitute diced jalapenos for the red pepper flakes and at the end added a handful of baby spinach.

      This was just great. I have never had the combination of shrimp and potatoes in the same dish and this turned out to be a wonderful combination. My only substitutions were lime juice instead of lemon and cayenne pepper instead of red pepper flakes. Thank you for a terrific recipe!

      MizzNezz you did it again, another great recipe. I did cut the oil down to 1 Tbsp because I'm watching my fat intake. I sauted the potatoes in cooking spray and used the oil for sauting the shrimp. I also didn't have any red pepper flakes on hand so I used a little bit of Cajun seasoning and it turned out great. I will make this again when I want something different for dinner. I made this with a tossed salad and corn on the cob and it was a very light meal. Thanks again MizzNezz.
