Potatoes Paprika

- 2 tablespoons butter
- 1⁄2 cup chopped shallot
- 2 teaspoons Hungarian paprika
- 4 tomatoes, peeled and chopped
- salt and pepper
- 2⁄3 cup sour cream
- 2 lbs potatoes, peeled and sliced
- 1 1⁄4 cups chicken stock (or 1 bouillon cube dissolved in 1 1/4 cup water)

- Pre-heat oven to 400°F.
- Melt butter in a frying pan and cook shallots gently, until softened but not browned (about 2-3 minutes).
- Stir in paprika and cook a further 3 minutes.
- Add tomatoes, season with salt and pepper and cook until the mixture thickens and nearly all of the liquid from the tomatoes has evaporated (about 5 minutes) and stirring occasionally.
- Remove from heat and stir in the sour cream thoroughly.
- In a large baking dish (I use an oval 35 cm X 24 cm) spread a layer of the sliced potatoes.
- Cover these with a thin layer of the tomato mixture (your mixture should be thick enough to spread easily with a spoon).
- Repeat layers, ending with the last of the tomato mixture; with the dish I use, I get three layers.
- Pour the stock over all.
- Cover the dish with aluminum foil, and bake for 1 hour.
- Remove the foil, and continue to bake until the potatoes are tender and beginning to brown, and the liquid is nearly all absorbed (about another 15 to 20 minutes).

This is an excellent dish. You can make it a main vegetarian dish served with a side salad, serve it as a side dish or for those have-to-have-meat eaters add a bit of cooked ham. My sauce turned out a bit liquid, so I will probably add some flour or cornstarch the next time. A student friend of mine made a similar version, using tomato paste instead of tomatoes and in lack of an oven made it on the stove top. It didn't brown on the top, but tasted great anyway, so for those of you, who don't have an oven,you can use this recipe as well, just cook it on your stove on medium heat until potatoes are done. You won't regret it.

I am an American married to a Belgian, and have lived in Belgium since December 1999. Cooking is my major hobby. I'm also an avid reader, but I have difficulty finding the time. I love to travel. Since moving to Europe I've been lucky enough to have had the opportunity to go a couple of times per year to Paris, as well as having visited London, Rome, Florence, Naples, Amsterdam, and of course Brussels and Antwerp. I've seen at least parts of most regions of France, as well as parts of Germany, Austria, a great deal of Switzerland, Slovenia, Croatia, Luxembourg, and Monaco. I'm absolutely in love with the Bay of Naples and Sorrento coast areas of Italy, which my husband and I recently re-visited on a trip that included Rome, Puglia, Umbria and Marche. I'm still looking forward to Ireland, Spain, Portugal, the Czech Republic . . . the list is too long ! One of the bonuses of travel is getting to taste the local cuisine, and afterward trying to figure out how to duplicate it at home.
I think cooking is one of the nicest things a person can do for someone they love (including themself!)

He was appalled by my posting this picture-- Our study is the messiest room in our house (thank god!)
