This is something my mom always made when we were rushing around. She made it for breakfast, lunch and dinner. It is VERY simple and quite filling. Try it and it will not disappoint you.

  1. Prepare hash browns as directed on the bag.
  2. After hash browns are done, push to side of skillet. Pour eggs on empty side. Cook for just one minute then turn pan so the uncooked egg slides to hash browns. Mix hash browns gently so the egg covers them. Continue cooking mixture but flipping instead of mixing. Sprinkle with salt and pepper and what ever else tickles your fancy.
