I combined this and another similar recipe that used fresh green beans for a dinner side last night. I really liked this. I added the tahini while the veg were still cooking and it coated everything lightly. Added a wonderful earthy flavor to my sauteed veggies. Thanks for sharing.

  1. Crush the garlic with a little salt in a bowl.
  2. Slowly add the Tahini paste and beat well.
  3. Add a little water at a time, alternating with lemon juice and keep beating.
  4. The consistency should be medium thick.
  5. Add salt to taste.
  6. You should have an overall tangy taste.
  7. Mix the chopped parsley and blend well with the Tahini sauce.
  8. Peel the potatoes and dice into a serving bowl.
  9. Pour enough Tahini sauce to generously cover the potatoes.
  10. Serve immediately.
