I found this recipe on another website called cdkitchen. I actually prefer a Mexican blend of cheese in this recipe, but any cheese will do.
- 6 potatoes, sliced thin
- 1 (8 ounce) carton sour cream
- 1 (3 ounce) can green chilies, chopped
- 1⁄2 lb monterey jack cheese, actually any cheese will do
- Slice potatoes very thin.
- Mix sour cream with cheese and chilies then toss in potatoes.
- Pour into a greased dish.
- Bake at least 30 - 45 minutes at 375°F.
