While you can dehydrate all the vegetables for this side dish before you set off, then rehydrate for 30 to 40 minutes, fresh ingredients are recommend. Either way, it is a simple and nourishing vegetable combination. I found this in The Trailside Cookbook.

Ingredients Nutrition

  • 3 medium potatoes, boiled and sliced (125 ml)
  • 12 cup cooked green beans (125 ml, or 8oz fresh green beans (250 g)
  • 1 onion, sliced
  • 4 ounces instant onion soup mix (110 g)

Directions

  1. Place vegetables in the center of a piece of foil and sprinkle over the onion soup mix.
  2. Fold the foil into a sealed parcel and place close to the fire or stove until all the ingredients are heated and cooked through.
