- 2 large baking potatoes, unpeeled
- 2 tablespoons olive oil
- 1 teaspoon oregano (leaf)
- 1 teaspoon paprika
- salt and pepper
- Preheat oven to 425*. Scrub potatoes, pat dry. Cut into eighths. Brush with oil and place in a baking dish. Sprinkle with oregano and paprika. Bake about 35 minutes until potatoes are done. Season to taste with salt and pepper.
