Potato Soup With Beef

"Just a little different take on potato soup. The added ground beef gives it a heartier taste."

• Serves: 6

ingredients

• 1 lb hamburger
• 6 slices bacon, fried and crumbled
• 3 cups water
• 1⁄2 teaspoon salt
• 1⁄4 teaspoon pepper
• 1 medium onion, chopped
• 2 garlic cloves, chopped
• 8 white potatoes, peeled and diced
• 1 tablespoon cornstarch
• 2 cups milk
• 1 teaspoon dried parsley

directions

1. Brown hamburger, drain off fat and put into soup pot.
2. Brown bacon, drain and also add to soup pot.
3. To your pot add water, salt, pepper, onions, garlic and potatoes.
4. Bring to boil then turn down to simmer for about 30 minutes or until potatoes are tender.
5. Stir the cornstarch into the milk until dissolved and add this to your soup and stirring slowly.
6. Simmer for 5 minutes longer and add your parsley.
