Potato Soup

"This is a wonderful winter recipe. I got it from an old friend a few years ago, and I have made it every winter since then. Watch out, it's not very healthy."

  • Bake potatoes at 400 degrees for 1 hour.
  • Scoop out the insides into a bowl and set aside.
  • In a large pot, melt 2/3 cup butter on low heat.
  • Add 2/3 cup flour.
  • Gradually stir in 6 cups of milk and turn heat up to medium.
  • Add potatoes, salt, pepper, cheese and bacon.
  • Cook 15 minutes, stirring constantly until all ingredients are incorporated.
  • Stir in sour cream and serve with warm crusty bread -- or even better in a bread bowl!

  1. Wow, this delicious soup is really rich! This would be great on a cold day. I used a Mexican cheese blend for the cheese. My only complaint is that its too thick.......I like my soups with more liquid. Reviewed for Spring PAC 2012.
