Recipe I got from my grandma--my family really likes it.
- 4 -5 medium potatoes
- 1 onion
- 1 (12 ounce) can evaporated milk
- 1 tablespoon butter
- salt and pepper
- 1⁄2 cup chopped celery (optional)
- 1⁄2 cup corn (optional)
- 1 cup sliced fresh mushrooms (optional)
- Peel and cube potatoes.
- Chop bacon and fry it.
- Chop onion and other veggies if desired.
- Put potatoes, bacon, onion, & veggies in large pot; cover with water.
- Cook until fork tender.
- Add butter and milk.
- Remove from heat.
- Salt and pepper.
Delicous! I made a few changes, though. I boiled the potatoes in 4 c. of water and added 4 chicken bouillion cubes. Then I added the evaporated milk, butter, celery, onion, and some shredded carrots. I left out the bacon, corn, and mushrooms and topped each bowl with shredded cheddar. It was some of the best potato soup I've ever eaten! =)
This is delicious and simple soup! I didn't have any evaporated milk so I used what I had on hand which was some heavy whipping cream. I added 2 chicken bouillion cubes to the broth before adding the milk for extra flavor. I did add the celery but I minced it before adding to the rest of the ingredients because my Dh isn't a celery person. He didn't notice a thing! LOL He loved it! :) Thanks for sharing your grandmother's recipe!
