This simple and delicious potato soup comes from my mother. It's the perfect soup to make at the end of a [religious] fast day.
- 4 diced potatoes
- 1 diced onion
- 4 cups water
- 1⁄3 cup oil
- 1⁄4 cup parsley
- 1 teaspoon salt (or to taste)
- 1⁄2 teaspoon pepper
- Combine all ingredients into a large pot.
- Cook uncovered for 30-40 minutes.
Delicious and so easy to make soup. Loved it. I've made it twice in the last few days. The second time I added one medium chopped green pepper from our garden for a 'pepper pot' soup. I added a little less parsley, personal preference only, and garnished the finished soup with grated cheddar cheese and crispy bacon bits. Served it with toasted garlic bread made from thick slices of French bread.Yum. Another favorite. Update October 14, 2007 Forgot to say that I used potato water left from making mashed potatoes the day before, and recipe #235039 instead of the water.
