  1. Melt the butter in a large pot. Fry the bacon and onions in butter. Cook until onions are clear.
  2. Add potatoes to the pot. Cover with chicken broth. Add bay leaf. Boil until potatoes fal apart.
  3. Use an immersion blender in mistre until smooth.
  4. Add cream and salt and pepper to taste.
