Directions

  1. Place potatoes in a pot with water to cover and bring to a boil; introduce butter, salt and pepper.
  2. Reduce heat to medium low and simmer until potatoes are tender, 10 to 20 minutes more.
  3. Meanwhile, prepare gravy mix.
  4. Bring 3 1/2 cups water to a boil in a large saucepan.
  5. Combine the remaining cup of water with the gravy mix and stir to dissolve.
  6. Stir into boiling water.
  7. Drain potatoes and add to boiling gravy mix.
  8. Continue to boil 5 minutes more, adding water to thin if desire.
  9. Serve at once.

I loved this soup. I didn't have any bacon so I used lowfat smoked sausage and added to the soup the last five minutes of cooking. I also added half of an onion to the boiling potatoes and about 2 t of garlic pepper, but would saute onions in some of the butter first next time. I also used the water that the potatoes cooked in, I think it would have been too thick for me if I hadn't done this. Loved the taste, and so simple to make.

This is good soup. Very rich. I didn't peel my potatoes, nor did I drain the water from them after they cooked. You lose a lot of flavor and nutritional value if you do. The vitamins in potatoes are in the skin. There aren't any ingredients listed to give the soup more flavor, so I used a package of Sausage flavored Country Gravy mix. That gave it a good flavor. This was easy to make and is inexpensive as well. I love potato sooup and will probably be making it again. Made for the Fall '07 PAC
