ingredients
- 4 medium russet potatoes, baked and halved, meat scooped out leaving a 1/4 inch of meat
- olive oil
- 14.79 ml chopped fresh parsley
- 0.61 ml fresh thyme leave
- 14.79 ml fresh hot horseradish
- 118.29 ml diced smoked ham
- 118.29 ml diced swiss cheese or 118.29 ml cheddar cheese
- 177.44 ml baked beans
directions
- Preheat oven to 400 degrees.
- Coat a baking sheet with cooking spray.
- Place the skins on it and then brush them on both sides with olive oil.
- Mix the herbs and horseradish, equally distribute among the skins.
- Topping next with ham, beans then cheese.
- Bake for about 20 minutes, or until they are crispy.

I made these for our Superbowl party tomorrow. I kept a few out to have with dinner tonight. My immediate family LOVED them, so I'm sure they"ll be a HIT tomorrow!! I didn't use the horseradish and used all cheddar. Hopefully I'll have NO TROUBLE with my blood pressure tomorrow,though. GEAUX SAINTS!!

Happily I had already baked potatoes which were in the fridge, so making this was an absolute doddle! Rather than baked beans, I ALSO had in the fridge some chickpea curry, and used that instead, oh yum, very good, lol! Since I knew DD would not like the curry OR baked beans, I made hers with just the ham and cheese, using a little of the scooped out potato flesh to make a hearty potato. Extremely easy and delicious, definitely a make-again, and next time I will use the baked beans, since I am very partial to them! :D Thanks Rita, this treat was made for the French Country Kitchen Herb and Spice of the Month: January�
