Potato Side

"It was spring, still a little cool and I wanted a warm side dish that was different. I like a bit of heat in my food, so I also added the crushed red pepper."

  • Preheat oven to 350°F.
  • Cut potatoes into 1/2 inch to 3/4 inch cubes; place in large bowl.
  • Add all other ingredients (except the cheese), and mix with a spatula until coated evenly.
  • Place in a casserole dish, cover and bake at 350°F for 40-45 minutes (until potatoes are tender).
  • Turn oven off, sprinkle cheese over top, replace cover and let stand in oven for 5 minutes until cheese melts.
  • Serve warm.

  2. loved it. I ued crushed pepper instead of pepper flakes, and a bag of frozen diced potatoes because I didn't have any. will definately be making this again!

  4. I loved this side dish. It was fabulous. I did a couple things different. I added 1/4 C. sour cream, and chopped green onions. Instead of butter buds, just added about 1 Tbs. butter. I also boiled the potatoes for about 10 min before mixing everything together and baking it. My husband also loved these potatoes and we will be making them again and again. Thanks for posting.
     
  5. Have been looking for something different in potato side dishes - especially with a little bite and this is perfect. The only change I make is to use fresh garlic cloves because we love it. Thanks for submitting. Liz T.
