Directions

  1. Put corn in a large bowl.
  2. Steam potatoes, covered, 8-10 minutes, or until they are just tender; add to bowl and season.
  3. Add green peppers, scallions and chili pepper.
  4. In a small bowl, whisk together sour cream, oil, lemon juice, cumin and season to taste.
  5. Thin with 1-2 tblsps water.
  6. Pour over salad and toss.

Very good potato salad that is a nice and spicy change of pace from the usual mayo ladden variety.
