This simple recipe comes from the 1923 Purity Flour Cook Book, which claims to be "Invaluable to the new -- and helpful to the experienced housewife".
- 2 cups hot mashed potatoes
- 2 tablespoons butter
- 2 well beaten eggs
- 1⁄2 cup milk
- salt and pepper, to taste
- Mix the ingredients together and put in a deep, buttered baking dish.
- Bake about 20 minutes in a hot oven.
I made this yesterday and enjoyed it, but I think I will add some extras next time. I made this with leftover potatoes and put it in the oven 20 minutes before my chicken caserole was done. My picky (likes plain food) DH said good
Great comfort food and easy to put together. My toddler absolutely loved this. It is the kind of recipe where you could add things like mushroom, bacon, spring onions, leek etc. Good base recipe.
Great! I added green onions, dried chives and shredded cheese. DS polished off almost the entire dish!
