I made these for brunch today and everyone loved them. I skipped the cold water step as well as squeezing out the excess water. As I doubled the recipe, I decided to reduce the salt, so I only used 1 1/2 tsp for a double batch. These were excellent and would recommend them for an easy brunch recipe. Thanks for the recipe.

My first attempt at making a potato pancake and the results were fabulous. I never realize how easy it was to prepare these. The only change I made was to add about a cup of cheddar cheese. The pancakes were creamy on the inside and crispy on the out. My family really enjoyed these. Thanks Mep!

I only had 3 potatoes left, so I only used 1 egg and stretched it with some grated cheddar. Delicious!

A very good stand alone recipe as written and a great recipe to build on with other veggies such as peppers,mushrooms other root veggies.
I used 2 carrots 1/4 cup red &green bell pepper mixed W/recipe and cut back on the salt used season salt and the potato cakes were wonderful will do this recipe again and again.

I made these for lunch and they turned out well. I found the salt to be excessive but that is just personal taste.

Wonderful potato pancakes! I used Idaho baking potatoes and one small onion. Do make sure you squeeze out as much water as you can! Used my electric skillet and enjoyed great tasting potato pancakes. Made and reviewed fo MEP's cookathon, August 2009.

Very tasty tater cakes! I'm sure I used less onion than most folks since I don't like that to be a strong flavor, but otherwise made as written. They're pretty easy to make and taste really good. DSS will be happy with these as I'll make these again next time he's here.

Fantastic potato pancakes! This is the same way I make them I just don't add baking powder. I always grate them by hand, extra work but worth it. My husband likes his just with salt & pepper, I like mine with maple syrup~ I don't soak mine in water either....
