I suppose any pancake mix could work. To cut prep time use frozen shredded potatoes, thawed and dried well
- 1 1⁄4 cups jiffy pancake mix
- 2 eggs
- 2 cups finely shredded uncooked potatoes (well drained)
- 1 teaspoon salt
- 1 tablespoon butter
- Melt butter in 325° skillet.
- Blend all ingredients thoroughly.
- Drop dough onto skillet and fry pancakes on each side until golden brown.
- Serve while still hot.
