They held together well. The flavor was a little underwelming. But I was mostly disappointed that they did not come out crispy. They had a nice brown color but not a crust. Too soft for my taste. Still, we enjoyed them with the tradional sour cream (yogurt) and applesauce.
Good pancakes! I added some garlic and cracked pepper and loved these--they really do hold together beautifully and result in a lovely stack of firm but light pancakes. Delicious with creme fraiche and coarse salt.
Happy Birthday QDM! Wish you could have seen the smile on DH's face this morning as I served his breakfast! He's a breakfast guy from a country where the potato is revered, so he took a bite, smiled broadly, held up 10 fingers & said "Hope you didn't make a half recipe of these!" I had made a full recipe & a good thing - 1 serving for me & 3 for him worked out just right! Thx for posting.
We enjoyed your potato pancakes for lunch. I hand grated the potatoes into a bowl of cold water. I then rinsed and squeezed dry before proceeding with the recipe. I added black pepper to the recipe. The mixture is a bit wet, but fried up fine. I served with sour cream, creamy horseradish, and green onions. Thank you QDM!
The first potato pancakes I've made that haven't fallen apart!! I added some pepper for a little kick and served with applesauce and sour cream... very yummy!
