Great idea for leftover mashed potatoes. We love this for breakfast with eggs and bacon. Also yummy with applesauce.
- Mix potatoes, flour and egg.
- Make into patties.
- Fry in margarine or butter until golden brown on each side.
- Serve warm.
Tasty breakfast dish, I served these with some grilled bacon and poached eggs, a nice change. I fried mine in canola and really liked the crispy texture. Thanks for sharing.
This recipe is lacking something, they fell apart in the pan when I flipped them. Tasted like eating warmed up mashed potatoes. I think maybe more flour or maybe baking powder might help. I was so disappointed.
