Potato & Ham Gateaux

  • Make the powdered mashed potato as on the box then add the eggs a 2 tbsp of parmesan.
  • Process the ham with the scamorza and the herbs to make a paste.
  • Line an 18cm springform cake tin with some baking paper and pour in half the potato mixture. Place the ham mixture on top and distribute evenly.
  • Pour the rest of the potato mix on top of that and dust the top with the remaining parmesan cheese.
  • bake in a pre heared oven 180C for about 30 minutes. Cool slightly before slicing and serving.

I live in a beautiful village on the island of Malta ( Europe) with my wonderful daughter, partner and two cats. I love the vineyards infront of my house or walking down to the valley of olive trees. ( I do pick olives every year) Some years ago I stopped working as a chef but still do a lot of home cooking. What I miss are the expensive ingredients I worked with, its rather hard cooking on a tight budget.
