    Delicious gnocchi recipe; this is a terrific side dish.. You can melt some butter over it and eat like that or you can use gravy, which tastes excellent!

      Preheat Oven to 425 degrees. Spread kosher salt on baking sheet and place potatoes on top. Bake potatoes about 45 mins or until slightly over cooked. Once potatoes are cooled, cut them in half and scoop out the flesh.

      Push potatoes through a potato ricer or grate with grater that has large holes. Put potatoes in a mound with a well in the middle. Add egg yolks, cheese, nutmeg and pepper. Mix all ingredients together to combine. Then add in 1 cup flour, pressing flour in with your fingers; keep folding mass over and pressing ass you add all of the flour, about 5 times.

      To test if the dough is ready, roll a large rope about a ½ inch thick, if it holds together, it is ready. If not, add more flour, fold and press the dough several more times, and test again.

      On a floured surface, cut dough into 4 sections. Roll each piece into a ½ in thick rope & cut into ½ in pieces. You may use a gnocchi board to give them their classic shape, your make it your own & leave them the way they are.

      When ready, boil water and add gnocchi, cook about 90 seconds once they have floated to the top.

      Serve as you like.
