You can't get much easier than this! The recipe appealed to me because I always have boneless/skinless chicken breasts in my freezer and there are many weeknights when I need a quick/easy recipe. The chicken was tender and had good flavor. The only issue I had was that the coating along the bottom of the chicken did not get crispy. I might try to flip it during cooking next time.

We love this chicken dish. To save some extra steps I just add the salt and pepper to the potato flakes bowl before coating. I also use a sprayed baking rack ontop of a baking dish so the underside of the chicken gets just as crispy as the top. My DD just loves this dish and says it is her fav. Glad you shared!
What a great, simple recipe! I made half, and used tenders so they only needed about 30 minutes to cook. I used them in sort of a "chicken parm" style (instead of traditional fried chicken parm) - added sauce and then broiled some cheese. I served it with pasta and it was a hit! Next time I might try adding some bread crumbs to the dry potato flakes for a little extra crunch. Thanks!
This was very good. I made it for dinner last night and really enjoyed it, especially because it was so easy. The reason I didn't give it the full five stars is because it wasn't as crispy as we like our chicken. I may try cooking it at 375Â° the next time I make it. Thanks for posting!
Made this tonight for dinner and I had to chuckle, our middle son saw me getting it ready and said eww I am not eating that. Well when it was done he was the first to eat it and said "mom, this is really good" :) And had second's along with the rest of the family. Thank you for a great recipe that will be made again.
