Potato Clam Chower

  • 4 slices bacon, cut in 1/2 pieces
  • 1 medium onion, coarsely chopped
  • 2 -4 garlic cloves (to taste)
  • 4 medium potatoes, cut in 1/4 to 1/2 inch pieces
  • 1 (10 3/4 ounce) can cream of mushroom soup or (10 3/4 ounce) can cream of celery soup
  • 2 (6 1/2 ounce) cans clams, not drained
  • 1 quart half-and-half, see note
  • 2 tablespoons cornstarch
  • 12 cup water

  • NOTE: can also use heavy cream and half and half. As long as what you use is 1 quart.
  • Dice potatoes in 1/4 to 1/2 inch cubes.
  • Dice bacon in to 1/2 pieces start to fry add onions to bacon and saute them with bacon till done.
  • In large pot add potatoes, clams(with juice), clam juice, soup, and half and half, stir till soup is mixed inches.
  • Add bacon and onion.
  • Simmer on med-low for 1 hour or so, till potatoes are tender.
  • Mix cornstarch and water stir into soup to thicken. IF needed.
  • Enjoy.
