  • Fry bacon until crisp in a saucepan large enough for soup. Remove bacon. Sweat onion and carrot until limp. Add potatoes, chicken stock and salt. Cover and cook until vegetables are tender. Add seasonings. Blend flour with 1/4 C milk and add with the remaining milk and heavy cream to the vegetable mixture, stirring constantly. Heat until slightly thickened. Crumble bacon and sprinkle over the soup. Add cheese and melt to taste.

  1. This is an OMG chowder!! My husband was not feeling well and I wanted to make some "comfort" soup. This was it! I used 3 slices of turkey bacon, sharp, shredded cheddar cheese, left out the sage and added 1 tsp Spike seasoning. I used fat-free evaporated milk and pre-shredded carrots, one huge baking potato and water and boullion (chicken). This is a creamy, just thick enough chowder and I wouldn't add any other ingredients. Thanks so much for a "doer again" recipe. Carole in Orlando
