    Thick and creamy and full of nice big chunks of potato and ham. So easy and so comforting. Great way to use up that leftover ham after the holidays!

    Directions:

      Bring water and salt to boil; add potatoes and cook until tender. Reserve 1 cup of cooking liquid (add water to measure 1 cup if necessary) and drain potatoes. Melt butter in med. saucepan over med. heat, add onion and saute until tender. Add flour to butter and onion mixture; stir until smooth. Season with a little pepper; continue to cook and stire for 1 minute. Gradually add potatoes, reserved cooking liquid and milk. Stir well; add ham and heat through. Add cheese, simmer over low heat stirring frequently for about 20 minutes.
