Potato Casserole

"Here is a very simple, very inexpensive meal that goes a long way. My grandmother would make this when I was a child and it was one of my favourite comfort foods. Today it is just one of the budget meals that taste great and smells wonderful while cooking. The potatoes may brown slightly on the bottom of the pan but the carmelization of the starch in the potato only enhances the flavour!"

  • Peel and slice potato into thin slices. Place in the bottom of a medium size baking pan. Lightly salt potato.
  • In a large pan brown ground beef, stirring frequently and breaking it up and skimming off excess fat. Season with salt and pepper if desired. Once done, sprinkle meat over potatoes.
  • Add onion to pan and saute until tender crisp. Spread over potato mixture.
  • Gently toss potato mixture a couple of times, not much, just to mix slightly. Poor liquid from peas and 1/2 cup water onto meat and potato mixture. Cover loosely with a piece of aluminium foil (allow a little moisture to escape).
  • Bake at 350'F for 40 minutes.
  • Remove foil, sprinkle peas across the top of meat and potato mixture. Test the seasoning and add more if desired. Bake uncovered for another 15 minutes or until potato is very tender.
  • Serve hot.
