One of my family's favorites.
- 4 large potatoes, diced
- 4 carrots, diced
- 1 onion, chopped
- 1 lb ground beef
- salt & pepper
- 1 (10 3/4 ounce) can cream of mushroom soup
- 3⁄4 cup water
- Brown ground beef with onion, salt & pepper. Pour off excess fat.
- Combine all ingredients in baking dish.
- Bake at 350 degrees until carrots are done, 1 to 1 1/2 hours.
Easy and economical. A little bland... which can easily be fixed to taste. I added ketchup to my serving and thought that helped the flavor a lot. This would be an good recipe to add in whatever leftover vegetables, rice, etc. you have on hand that need finished up.
