When I was a kid growing up in Louisiana my moms best friend would make this for me. I am now 35 and I finally found the recipe I have been looking for forever and I can't wait to make it. Thank you so much for posting it.
I have never made or eaten potato candy, so this was an adventure for me! It turned out quite good, I used almond butter instead of the peanut butter and I ground my own pecans. Very tasty and you're absolutely right - you cannot stop eating it. I think you could probably come up with different variations that would all be worth making. It's so easy. Thanks for posting - I will add this to the holiday "cookie tray" assortment. Made for Spring PAC 2012.
Not one of my favorites, but well worth the time to make. I used a russet and made my own pecan meal. This probably will be made again, just so I can share the "whoa" factor!
