Hard to believe that there are mashed potatoes in these but no one will be any the wiser if you dont tell them! I've never really counted how many you get so that number is a guess.
- 1 cup mashed potatoes
- 1 lb powdered sugar
- 1 lb flaked coconut
- 1 teaspoon almond extract
- 6 ounces chocolate chips
- 1⁄3 cup paraffin wax
- Mix potatoes, sugar, coconut and extract together.
- Refrigerate 1 hour.
- Shape into walnut sized balls.
- Melt chips and paraffin over low heat.
- Coat balls and place on waxed paper to harden.
- Cool and enjoy.
The flavor was okay but not great and it stayed soft. I added cocoa to stiffen it up and it was still very sweet. To keep from trashing it, I used it as a base for whiskey balls....added grahm crackers to a blender with walnuts and whiskey and blended. That we loved. Gave the balls a fudgy texture. I used red potatoes and microwaved them, then totally let it cool. I'm not putting stars because I don't know if I did something wrong and the whiskey balls came out so good!!!
Thank you so much for posting this recipe my mom and I used to make this every Christmas but then the recipe was lost and we couln't remember all the ingredients I look forward to being able to make this again.
This is great candy. I have used this recipee for many years. Try separating the mixture and adding different extracts to each part..lemon, peppermint, cherry etc
