- 453.59 g yukon gold potato, quartered
- 4 slice bacon, chopped
- 3 green onions, sliced thinly
- 118.29 ml grated cheddar cheese
- 1 egg
- salt and pepper
directions
- Steam potatoes until tender when pierced with a fork.
- Fry bacon until crispy, strain off fat and set aside.
- Smash steamed potatoes and add the bacon, onions, cheese, egg and season with salt and pepper.
- Let cool.
- Form potato mixture into four patties.
- Put reserved bacon fat into a large skillet over medium-high heat.
- Add a touch more cooking oil if necessary.
- Fry potato cakes until golden and heated through.

5 star rating for sure! We absolutely loved these cake; I just prosciutto instead of bacon because I was using prosciutto in some other dish at the same meail. It is great that you are able to make these well in advance and then fry them on the pan just before serving. I only used 1 tsp oil in a non stick skillet and that was fine. I will for sure be making these again!

OMG!!! This is the king/queen of potato pancakes!!! I have had them with the onions and cheese, but when you add the bacon and fry them in the bacon fat, WOW!!!! These are so full of flavor, you can't go wrong. I did use Egg Beaters for the egg and scaled it down for one serving, but otherwise made as written!!! Thanks for sharing this recipe. Made for Photo Tag Game!
