this is an old civil war recipe for hashbrowns/potato cakes.

  1. Peel & grate the onions & potatoes. Combine with eggs, flour, baking powder, salt & pepper. Heat fat in a frying pan & drop mixture from spoon in to hot fat. Fry until brown on both sides. Serving size is approximate.

Thanks, Fawndog, for another tasty dish. Very simple to put together and very quick to prepare. One sister had them with sour cream, the other one used applesauce. I had mine plain with just salt and pepper! Adopted for Spring 2008 PAC.
