very tasty! I needed to add a little salt, and I skipped the butter and flour (we have dairy and wheat allergies in our family), and instead sauted the veggies in olive oil. It turned out great, and was so satisfying on a chilly night.

A fabulous soup! I'm a fan...first time making this type of broth, it was easy to make, a great use of leftover ham, absolutely delicious!! Followed the directions and doubt I would modify it at all though next time I might try the olive oil variation mentioned below. Thanks for sharing this recipe.

This was lovely! I had to use a regular onion since I didn't have green onions on hand, and I only had a little bit of ham, so I also added 3 strips of bacon, cooked and chopped. Followed all the directions then put it in the crock pot instead of the 20 min simmer. Made a wonderful lunch on a cold rainy day! Might add a dash of sour cream on top of the bowls next time for additional layers of flavor! Thank you for an easy and delicious meal.

This soup is pure comfort food on a cold, cold day. It's so delicious and tasty. I followed the recipe as stated, with a few minor adjustments. I used homemade turkey stock, ( make lots of it and I freeze in 2 cup containers ). I used 8 cups of stock and I sliced the carrots very thinly and used 6 potatoes instead of 3, ( we love soup so I make plenty). I used my immersion blender and pure├ęd about 1/4 to 1/2 of the soup, leaving a good portion with chunks of potatoes. You will have to season the soup to your taste,as it is bland, but don't let that stop you from making it, serve with salt and pepper on the side,that's what I do, ( hubby can't have salt).

This is thick enough without having to mash the veg....talk about comforting, wow. The carrots do add a lovely coor and flavor to the soup. I did take a page from Vicky and added about 1/2 c. of sweet white wine to this. I did have to add salt, but this would all depend on the saltiness of your ham and broth, therefore I recommend you wait till the very end to do so.

This was excellent, and I will for sure make it again! I saved the recipe! It tasted so good on a chilly evening. The only differences were that I added a cup of apple juice (for 1 cup of water--added a nice sweetness), 2 tsp salt, diced 1/2 red bell pepper, and 1/2 diced small onion (didn't have scallions). This went in the crock-pot and finished on the stove-top. The carrots gave it a lovely color. Thank you for the wonderful soup recipe! :)
