Potato and Veggie Salad

"Very simple salad that changes a little every time I make it. Feel free to add your favorite veggies or take one out if necessary!"

• Serves: 6

ingredients

• 1 1⁄2 lbs red potatoes, cubed and cooked
• 1 (15 ounce) can sweet corn
• 1 (15 ounce) can green beans
• 2 cups grape tomatoes
• 4 cups Baby Spinach, diced
• 1⁄2 cup shredded carrot
• 2 large cucumbers, diced
• 1 cup gorgonzola

directions

1. After cooking the potatoes, combine all ingredients and add dressing of choice and enjoy!
