I must admit we are not big fans of mashed potato casserole style dishes but this one went down really well (with the DH saying he would definitely have this again), the only change I made was to use sharp cheddar cheese in place of the parmesan cheese and then poured of the fat from the casserole dish (used a rectangular corningware style dish) and for us that would be 5 serves (the DH and DS ate half but the DM and I could only get through a little over half of our serves but it tasted delicious. Thank you loof made for Aussie/Kiwi Recipe Swap #77 June 2013.

This did not work out as well as I had hoped. I cut the recipe in half. The tomatoes just did not seem right with the mashed potatoes - I am sure this is just a personal quirk of ours. Thank you for posting, I don't regret trying it.

The tomato/potato combo just did not work for us, and the two completely different layers were just weird....I love all the ingredients, but the way it came together just didn't work for us. Maybe without the tomatoes like previous reviewer said?

This was a tasty change from ordinary mashed potatoes. I made these without the tomatoes because I do not care for them cooked. Thanks for the great recipe... Made for 123 HITS

Delicious meal this! We had it with a pork chop and it was colourful, tasty and varied. Certainly a perfection of normal and now boring mashed potatoes! The only difference I will make next time is to layer the cheese with the potato so it goes all the way through, but it was fantastic. Loved it loof! Thank you
