  • In a dry cast iron pot brown fat side down, then continue to brown all sides.Your kitchen will be smokey!
  • Season with salt and pepper.
  • Add 1 can beer.
  • And pour the other can for yourself!
  • Add rest of ingredients except butter and flour.
  • Put pot with cover into 325 degree oven for 3 hours.
  • Melt butter in micro and flour.
  • Remove roast and vegies from pan.
  • Add some drippings to butter then add back to pan.
  • Cook 5 minutes till nice and thick.
  • Add veggies back to sauce. Plate the sliced roast {if it`s not already falling apart} Top with the veggies and serve with your or my favorite side!

  1. Why a cast iron pan?? Wouldn’t an enameled steel pan work as well??

  1. I browned the roast, then added all the ingredients plus a few potato chunks. This was cooking all day while I was gone. I came home to the most delicious dinner! It sure was easy, and we loved the flavor. I thought the beer taste might be too strong...not a bit!! Made a salad and we were eating in no time. Thanks for the recipe Rita!
     
  2. This dish is lovely and so flavorful. I cooked it in my Dutch oven for the recommended time, and the meat was so tender. I also added 2 potatoes, halved and cut in wedges. This was a delightful meal, and we will be enjoying this one again. Thanks for sharing the recipe.
     
  3. this recipe was great! i've been trying for years to make a tender roast, i fail where others have succedded all the time! (even in a slow cooker!) However, this recipe is perfect, restaurant quality! The only thing I did different was add a couple of beef boillon cubes to the pot before sticking it in the oven, and it was delicious. Such a sinch to make too, it was ready in minutes to go in the oven, and i couldn't have been happier when taking it out. thank you so much!
     
  4. This is a really good recipe. I made some small changes... I didn't have the Mushrooms, and don't like Peppers so I did not include those. I added Potatoes and Hatch Green Chile. Other than that I pretty much stuck to the script. The meat was wonderfully tender and delicious. Great recipe, definitely one to keep around.
