UPDATE - Made this again last night, made gravy with the juices by adding some cornstarch. I then took the left over gravy, pot roast (shredded) and vegetables and made the most awesome beef barley soup. Just add some water and barley and it's as easy and delicious as it can get! FINALLY!! I have been trying different pot roast recipes for years and they never seem to turn out. DH took one bite and said, "this is the one honey!". I used two 1-1/2 pound chuck roasts, added the herbs at the beginning, made the potatoes separate and thickened the juices with cornstarch for an outstanding gravy. Thanks for sharing!

I cannot begin to tell you how many pot roast recipes I've tried w/no success......until now. This was fantastic. Moist and full of flavor. Made a couple of changes. Sauted the celery w/the onion and threw in some finely diced garlic. Did not cook potatoes w/the roast and added the herbs at the beginning. This will no be my tried and true roast recipe. Thanks so much.

Made this today for dinner. But DH turned up at 5.30 p.m. He has a knack of doing so on beef roast days :) (loves his meat) Wanted to have it straight off as the aromas were getting to him and he was hungry too :) He gave it a mighty huge thumbs up and beleive me he has taste (married me didn't he ;)I did not have beef broth :( so added some water and soya and worcester sauces. But rest of the recipe I kept intact. It was really very, very nice, I should actually say very, very MissNezzy!!! ;) Thanks - Fay

I loved this recipe. It turned out lovely with a 2.65# boneless chuck roast. Did everything as directed. Perfecto and delicious. I enjoyed not making my usual oven crock pot...this on the stovetop was nice! Thanks for a great recipe!

This recipe was great. Our roast had pepper to start. I didn't include the potatoes; but added rice instead (1 1/4 cup). I cooked the rice in soup after the meat was cooked. It was ready about 20 minutes later. I actually forgot the spices; but the pepper that was already on the roast made up for it because we couldn't even tell. I already had all the ingredients. My family including my children 2 & 4 loved it.

This was delicious. I followed the recipe to a 'T'. My husband who is incredibly picky loved it as did my mom who is an awesome cook. So if she said it was good, then you know it is really good!

My family loved this! My mom asked me to find and print out an easy pot roast recipe for her, and this is what I found. I didn't taste it, but my mom, dad, and niece all say 5 stars. My mom saved the recipe and will make it often. Thanks!
