Portuguese Spiced Rice

- 1 cup rice
- 2 3⁄4 cups water
- 1 1⁄2 tablespoons butter
- 1 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1⁄2 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon ketchup
- 1 small onion, finely chopped
- 1 (10 ounce) can sliced mushrooms or (10 ounce) can baby clams, rinsed
- 1⁄4 cup bell pepper, diced (any colour) (optional)
directions
- Combine all of the ingredients in a large microwavable casserole dish with a lid. Cook in the microwave on high for 16 - 18 minutes, or until the rice is tender and the water is absorbed. Fluff with a fork and serve.
