  • In a 4-quart pot, heat the oil over medium-high heat. Add the onions and garlic and stir-fry until golden. Add the rice and cook, stirring constantly, until slightly toasted and fragrant, 2 to 3 minutes. Add the water, bay leaf, tomatoes and salt and bring to a boil. Cover and reduce the heat so that the rice just simmers. Cook undisturbed until tender, about 20 minutes. Remove from the heat and let stand covered without stirring for 10 minutes.
  • Fluff with a fork, discard the bay leaf, and serve.

  3. This was a really good rice dish, but I thought it needed a few herbs for added flavor. But the fresh tomatoes was a wonderfuly touch. It went with our roast chicken. Thank you for sharing your recipe, AZPARZYCH. Made for ZWT8 ~ Spain/Portugal.
     
  4. Rice is my favorite and I knew by reading the ingredients' list that this one would be good! I first rinsed the rice in a fine mesh sieve for one minute then set it aside to drain all day until dinnertime. The onions and garlic (garlic from our CSA box) were finely minced in a food processor. I used veggie broth for water and added an additional one half cup of water. The fresh bay leaf (fresh when purchased but kept frozen) was bruised first to enhance flavor. I was surprised by the flavor the bay leaf gave the rice and for that reason give this recipe a five star rating. Fresh local tomatoes as well.   5. We enjoyed this, a nice flavoursome rice. I cut quantities back a bit for just the 2 of us, and I used the usual ratio of of one cup rice to 2 cups water that I usually use. Liked the fresh tonmatoes in this :) made for ZWT 8, thank you AZPARZYCH!

I am also&nbsp;married to my best friend, Jeff and have been since April 2005.&nbsp; I love cooking, hate cleaning and will do whatever I can to get out of it!&nbsp;&nbsp;I&nbsp;love grilling and baking.&nbsp;&nbsp;I do most of the grilling at my house, and bake for almost a week straight at Christmas time!&nbsp; I can make or will attempt just about anything,&nbsp;though I rarely make&nbsp;brownies, my husband's are the best!&nbsp; Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p> <p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites.&nbsp; I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day!&nbsp; Over the past couple years with zaar, I have found tons of new recipes&nbsp;my family&nbsp;normally wouldn&rsquo;t eat&nbsp;but have been happily surprised with new favorites.</strong></span></p> <p><span><strong>I&nbsp;love to join in&nbsp;all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p> <p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes.&nbsp; Most of all though&nbsp;are my kids; being home all day with them is fun and challenging, but I wouldn&rsquo;t trade it for any salary!!</strong></span></p>
